Imagine walking through your kitchen as a kid and seeing ducks hanging, authentic Asian woks and smelling the aroma of traditional Asian food being cooked by your mom.  Now imagine being in that environment growing up in St. Louis, Missouri in an African American household. That was the norm for The Chef Jason Ellis and the seed was planted that blossomed into The Chef’s culture of blending Midwest BBQ with Eurasian cuisine. This unique upbringing in St. Louis inspired the The Chef’s newest creation, Smoke 631 BBQ.


Smoke 631 BBQ, named for St. Louis zip code 63136, is The Chef’s new restaurant located in Lawrenceville, Georgia. While growing up in the heart of Midwestern BBQ country, The Chef’s dad barbecued every chance he got and a young boy was entranced and inside The Chef was born. Smoke 631 BBQ is not just an everyday BBQ restaurant; The Chef takes traditional Midwestern BBQ Southern influence and adds his signature culture blending style together. From your choice of Smoked Pork Spare Ribs to Smoked Garlic Moscato Butter 'Lobster or Jalapeño Cilantro Coleslaw, the beautiful fusion of flavors will have you coming back for more.


The Chef began his formal cooking training at age 18 by joining the United States Army, in which he served until he was 21. He was stationed in Berlin, Germany and upon returning home to Greenville, SC he apprenticed at Ristorante Bergamo under renowned Italian chef Nello Gioia.  Now from his home base of Atlanta, Georgia, Chef Jason Ellis is foremost a husband and father of four, two daughters and two sons and a highly sought after chef for corporations such as Miller Coors and Atlanta's high society, athletes and musicians. 


Nationally known for his fiery appearance on Season 7 of Fox's Hell's Kitchen, The Chef further built his brand following his top 5 exit on the show. His catering company, Lobster & Chocolate Affairs LLC is The Chef's unique blend of Southern comfort food and classical European cuisine with a twist.  The Chef creates memorable dining experiences for all, from an intimate dining experience for two to large gatherings. He is creating an easy how-to cookbook to guide his fans on how to achieve some of his most signature dishes such as, Lobster and Chocolate, Strawberry Summer Salad or Brown Sugar Smoked Wings & Lollipop Chicken Legs and many others.
